Gentlemen,
I am pleased to present to you a J. A. Henckels from three different eras. Here we go!
A knife with a single carbon steel blade and horn scales. Excellent blade action and click. I estimate it was made in the 1920s-30s.
The knife features the Mercedes-Benz logo and yellow celluloid scales. The stainless steel blades have excellent action and click. According to my prediction, it was made in the 50s
A gentleman's knife with guilloche in a sheath. Made entirely of stainless steel, it bears the Friodur hallmark. Brand new, unused. I believe it was made between 1965 and 1975.
I would be very grateful if our esteemed experts would take the time to consult their reference books and catalogs to confirm or refute my guesses about the age.
Once again, I would like to emphasize that Henckels is Henckels; the quality of workmanship and mechanics speak for themselves.

Hmm, Friodur technology appeared, I think, in 1939. I would be glad to have such an old knife in such excellent condition.

You're right. Apologies. So it'd be 1940ies ... ;)
Okay, if you don't take into account the time of WW2 until 1945, then two years for rehabilitation and restoration of production capacities and facilities, it turns out that the years of production of this knife are approximately 1948-1950, do you agree? 😉
