Old style meat cutter

picked this nice stag meat cutter and matching fork up at a local fleamarket, cleaned it up and changed the shape (removed the small clip see pcis 3 & 4 for original shape). Forget the polish/scratches for the moment.
Comments ?

blade 16cm; fork 14cm. HCS no mark (vermutlich Alberstötter).

Hi Hattie,

it is a standard Nicker-Blade with standard applications (don't know the right words for the other Metal-Parts)
You can buy alle the Parts for little money in Knifemakershops (for example at Wolf Borger's shop)
Edit: After looking at a picture of the standard Nicker Blades i think i was wrong. The Blade seems not to be a standard-Nicker.

Please dont understand me wrong. It should be a good Knife, but in my opinion it is not a proof of a "quality handmade Knifemakingship".

Das ist keine Nickerklinge.
Das ist eine Tranchiermesserklinge und zwar eine aus nicht rostfreiem Stahl und recht hübsch geschwungen.
Da mag ich einfach mal stark bezweifeln, dass man die für schmales Geld beim Wolf Borger bekommt.

Aber vielleicht spendiert Hattie ja auch noch ein paar Maße, dann dürfte klar werden, dass das kein "profaner" Nicker aus der Krabbelkiste ist.

Hmh... 100% sicher bin ich mir natürlich nicht anhand der Fotos und nicht vorhandenen Messerdaten.

Ich finde, dass die Klinge "gesenkgeschmiedet" aussieht und die Form hat mich an eine alte Nicker-Klinge erinnert, welcher schon häufig nachgeschliffen wurde. (obwohl sie in der Tat länger aussieht als die üblichen Nickerklingen vom Grabbeltisch)
Ich will damit nur sagen, dass die Klinge für mich nicht nach einem handgefertigten Einzelstück aussieht.
Ein gutes Messer kann es ja trotzdem sein!

Falls ich mich geirrt habe, dann freue ich mich für Hattie und gönne ihm sein Fund von ganzem Herzen.

In my opinion it's a shame to alter the original shape! Now it looks like so many knives, nothing special, except the good stag handle.

sorry - meine schuld - it is a part of a server set. siehe Gabelbilder.
Blade length: 16cm ; Fork 14cm.

Die form (original) sieht mann auf bild 3 & 4 wobei ich stark vermute (da ich aehnliche alte server sets habe) dass der klip uhrspuenglich viel laenger - d.h. die klinge laenger - war ! es sah meinesachtens nicht mehr proportional aus, und deswegen habe ich es geaendert.

Scheint tatsaechlich gesenk geschmiedet zu sein - allerdings entdeke ich keine marke. Handgeshmiedet ist es bestimmt auch nicht, aber sehr alt. Ich habe ein paar steak knife & fork sets die aber GENAU den gleichen Styl haben und die abschluesse sind auch exakt gleich. Sind von Fa. Alberstötter.

Ist auch stark gebraucht und ist gewiss carbon steel - schneidet auch wie teufel besonders da schoen duenn geschlifen.
