Regarding the name of the material, V-Gold is well-known as a top quality for steel in Japan, and we just call it "V-Gold" in Japanese language. We say "V" as it is in alphabet and "Gold" in Japanese character like Japanese character of KASUMI.
It is one of the trademame named by the steel company for their product (steel) in Japan, for instance, it is the same concept as the name of KASUMI or GLOBAL and I do not know how it is treated in Germany.
Another example is that, to distinguish the grade of the carbon steel for traditional Japanese knives, the names are "Blue-Paper" or Yellow Paper" and some others in Japanese, and it is important to indicate the names of the steel like this for expensive traditional knives, and professional chefs who use the traditional knives can easily know the quality of the steel from the indication. Of course, there is no paper contained.
Regarding V-Gold, there are three knives: V-Gold No. 1, No.2 and No.10, and No. 10 is the highest grade, that is used for KASUMI.
